If I start a repeat career (is that the correct phrase?) on Mass Effect 1, will my love interest transfer as well? Or will it reset? In my first game I chose Liara, and this time I don't want anyone going into Mass Effect 2. Can't cheat on a girl you know?

If you start a career with the same character, choices from the previous play through don't carry over. Your level, equipment (excluding grenade and medigel upgrades), credits, skill points and omnigel all carry over.
So you could romance Ash on one pass, and Liara on the next, with the same character.

What Ranger said. The only thing that carries over is your skill points and items. Everything else resets; it's basically a whole new adventure from the start, just with the same stuff (armor, weapons, etc.) you had on your previous playthrough with that character.

Something that might be worth mentioning (although you may already know, if so apologies): Each runthrough creates a seperate end save that counts as another potential import for ME2.
