What I mean is it's just a story device. No riding just a animated horse with the explanation that thats how we are going to get arounfd the land regions of thedas.

Horses were the main prey of griffons, who due to overbreeding by the Grey Wardens consumed the horses to extinction. With no horses, the griffons promptly starved to extinction.
