Resources and character/party/base upgrades. Of course you won't be scanning planets, nor will you have a ship. But if you have a party camp or other base of operations, maybe you could eventually upgrade it. Build a palisade around the camp or a wall around Hawke's house and so on. And things... magical potions or procedures, exotic regiments or training with a master that upgrade a character (most likely Hawke) above and beyond levelling up. I liked this aspect of ME2 very much, though it didn't really feel fully developed in that game (the ship upgrades mostly relating to the final mission except two made it feel that the entire system was mostly there for the Omega 4 Relay chapter).

Helm hide? If the game is anything like Origin's inventory system, then you have an option: Helmet or no. Besides, in Origins, it removes your helmet during most cinematics.

We're cutting out character selection, adding a dialog wheel with color coated options to help the kiddies who shouldn't be playing the game in the first place understand what they're saying, let's just get rid of emotion altogether. The Power Crystals are essential to a sword because they're actually now Light Swords, and must be changed periodically to keep the weapon from self destructing. It is really no more effective than an actual sword, the light is just for looks.
The bows, on the other hand, need the Crystals to do absolutely nothing.
Magic is no longer generated by a person, it is generated from these power crystals. MAGIC FOR EVERYBODY!

Seriously, we know very little about the dialogue wheel for DA2. The only thing we know it has in common with ME's wheel is that it's round.

Anyway back to the OPs question.
1: ME2's loyalty mission.
Most of them (not Jacobs. no. no. no.) were 10 times better than the companion quests in DA:O. Tali's was heartbreaking. Miranda's made me stop hating her. Samara's made me so much more connected to her that she never left my party for the rest of the game. They explored history, motivation, AND displayed the emotional depth of the characters. DA:O's touched on history or motivation but Wynne's was the only one that had any depth and made me feel closer to the character.
2: Character models based on the VA's - (not everyone of course, just some of the more recognizable voices)
I'm a big Chuck fan so it was great seeing Yvonne's face with her voice. It fit together and made me forget about the person behind the character. However, I was also a big Farscape fan and I spent my first playthrough of DA:O going "hehehe Aeryn Sun is a witch of the wilds." because my brain kept disconneting Claudia's voice from Morrigan's face. I kept trying to picture Claudia instead of Morrigan. Then I went and got myself the PC version and made a Claudia Black morph and now I have no disconnect.
