The bonus would be all of the cut content, perhaps improve the mechanics a little bit, wrap it up, and send it out. Of course, if they added loads of extra content (as I think they should), they could still implement a "legacy" option where you just play the original release storyline and mechanics with teh improved graphics and such.
If they did even just the three things that Drum suggested and didn't do anything else, I'd still pay for it all over agian, $60 as a matter of fact, for the pleasure.
And yes, some of you are correct, we need to be writing LucasFilm for this request, but it doesn't hurt to drum up interest here either to promote the cuase.
