Really, every class is fun in its own way, you just have to adjust your tactics depending on your class to maximize your strengths. Soldier is versatile in the you can use every weapon (except SMGs, big whoop), and have all the non-bonus ammo powers as well as the best health and the almost overpowered adrenaline rush.
Vanguard specializes in shotguns the way no one else can really, with Charge being one of the most spectacular skills in the game. They also have decent backup biotics that help get people out of cover for charging.
Infiltrators have the special sniping slowdown in addition to tactical cloak, letting you simply own people with your sniper rifle (especially when you get the Widow) in addition to having some backup tech powers like incinerate, that lets you strip their defenses before headshotting them.
Sentinel combines an engineer and an adept with a nice combination of tech and biotics, with tech armor giving it good survivability for a non-combat class.
Adepts are the masters of crowd-control, and still are even on the upper difficulties, they just have to work at it a bit more. All biotic attacks kill husks instantly, making adepts the best husk killers in the game, and warp explosions add up really quickly, especially if you have another biotic with you.
Engineers can spam combat drones, since the cooldown is so low, and enemies will ALWAYS attack the drone instead of you, giving you some breathing space and letting you riddle them with bullets as they foolishly turn their backs to you.
My personal list would be: Vanguard, Infiltrator, Adept, Sentinel, Soldier, Engineer.
