You can either choose to be: Wise, Tough, cocky, Witty... and so on.
I would choose mine to be like Edmund Blackadder, but have the heart of Sherpard. I would love to insult people in the best way ever!

Don't expect something much more than Good, Bad, Morally Grey responses being the norm, but expect at least a bit more freedom and variety then what you'll find from Shepard.

Only problem is these "other" responses we're very inconsistent.
You could very easily play the goody-toe shoes paladin. And select all the cliche' good responses. Your characters "voice" in game would be very consistent.
However, trying to play a character outside of the cliche' Good/Neutral/Evil archetype was tricky. Say you wanted to play a sarcastic ladies man half-elf who seems like a dick but is really a good guy. THAT would be tricky. Not all responses would fit your character, some sure, but there would be times where responses just didn't fit your imagined personality. This lead to a very inconsistent "voice" for your main character. I ran into this problem ALLOT during DA:O.
For better or worse, I think the ME system trims the fat.

I'd like to see the new system try to replicate that. With vocing and all it can be really hard, because I don't want my Hawke to be just angry. I want her to be bat**** insane kind of angry.

Yes, I know that it's an important part. But I would rather have different choices depending on your peronality.
Lets say in the character creation you have "personality choice" which gives you a range of different personalites.
Evil
Noble
Wise
Intelligent
Coy
Tough
Violent and so on...
So let's say you chose Noble
NPC: Hello Good Sir!
PC: Hello, Good Morning!
You chose Evil
NPC: Hello Good Sir
PC: F*** off!
