Sarevok mentions how Saradush is important for Alundo's Prophecy. So why did he try to start a war between Amn and Baldur's Gate, when it was centered to the south in Teyther?

Sarevok tried to start the war because he thought the slaughter could elevate him to godhood. It didn't matter who died, so long as there were enough of them dying.

Simple answer, TOB contradicts some of the plot details from BGI and you shouldn't worry about it too much.

It doesn't exactly contradict, but Sarevok tried to go about his own way, dealing with the prophecy, part of the reason he got killed (also because of Bastard Sword of Kondar/Arrows of Implosion).
