Champion (not the specialization) Is just a title, like bann, or arl or such, just not quiet as high up in the ranks. champions are likely the guys who get to boss knights around. its a prestiege position within the city, but doesnt mean squat elsewhere unless you really do somehting to impress them.
What is the significance of being Champion?

Well the story spans 10 years, if you become one of the most important people in the History of Thedas I doubt that saving Kirkwall is the most important, you probably get the title along the way but I think the most important think will be uniteing the Free Marches and concuring a big part of the world.
