But to be honest, they should've stayed consistent and take ME (1)'s soundtrack and go from there. Both scores are a bit too different from each other if you ask me.

I don't.
ME2's soundtrack made frequent and magnificent use of leitmotifs, especially towards the end. Personally, I love the device of one overarching theme rearranged for different emotional moments. It was used to brilliant effect during the climactic mission and I felt driven to make it to the end by the sheer epicness of it all.
ME1's soundtrack was great and all, but I simply prefer orchestral scores because the depth of the arrangements simply makes for a more layered listening experience.

I think ME2's is FAR better than ME1's. Though curiously one of my favorite tracks was omitted from the OST CD. (Endgame2_Combat1 if anyone's interested). Seriously though I loved the whole ME2 soundtrack while only a few songs from the first game caught my attention.
