Mostly I want a none-drunk dwarf. Since we won't get to play one on our own I would want a real duster dwarf from the dust town in Orzammar or a strict traditional one that been forced to the surface for one reason or another. Doesn't have to be of the noble caste, a warrior dwarva would be just as good. 
Just as long as it's not another Oghren or some comic-relief character that is just there to provide laughs. The dwarf culture was the most interesting part of Dragon age and I hope we can see more of them even if we can't play one ourselves this time. 
All dwarves need to be drunken dwarves. Its one of the primary rules of fantasy.
1. The Humans are always the best.
2. The Dwarves are always drunk.
3. The Orcs are always bad.
4. That crate has money and a giant zwiehander inside it.
I like zazei's suggestion, on top of what I want with a dwarf companion
and I don't feel it necessary to follow the traditional guidelines of fantasy, Dileos. Many of the rules have already been broken by Dragon Age: Origins already. Dwarfs in all other fantasy franchises were the epitome of honor and warrior lifestyle, whereas in Dragon Age so far, nearly half the dwarfs you meet are rogues, corrupt politicians, or just self-serving scum of warriors, which I found so fascinating because it was a different version of the dwarf that we've seen.
Also with elves, in all other franchises they maintain an air of superiority and dynasty/legacy because they usually live separate from everyone else with a prosperous civilization. In Dragon Age, those who live in cities or in the Mage's Circle are either subjugated, subserviant, or just commoners. While the Dalish are the closest to elves as we typically see them in fantasy, they're nomads, just trying to survive, rather than prospering in their society.
I like the changes the Dragon Age has made to fantasy lore. Probably one of my favorite things about Dragon Age.
