Stan's race is Qunari and he is the Stan like you are the Grey Warden. Get Stan in your Party and enter the Fade in the Mages Tower. When you get to his dream you can ask why his fellows call him 'The Stan'.

Well, one could argue the Qunari's way is wrong, yet they are the most technologically advanced race/country/people in Thedas (methinks at least?). If people will keep themselves out of technology, going against the Qunari will be like the Polish in WW2 against Germany : Riding horses, using sword against Tanks and machine guns.

That is his job, and thus the name used to address him. Qunari do not consider Tal'Vashot to be Qunari due to not following the Qun, but they consider humans or elves that do to be Qunari. Hence the question.

And it is Sten, not Stan.
