I think ME2 does a great job at showing the more human side to Shepard as opposed to the hard-faced Commander figure in ME1, especially evident with the reunion with old friends. Interrupts help, too. Overall Shepard was more expressive and I liked that a lot. I hope ME3 continues pursuing that path.
That's funny, because I thought the opposite for ME2 as a whole. I think there was a lot of room to explore Shepard's emotional depth in ME2 - with her having gone through death, lost her crew and closest friends, separated from her love interest, and tasked with saving the galaxy yet again - but I felt it skirted around most of these. The fact that she'd died wasn't even touched on unless it was a quip or one-liner. Seemed odd to me.
So I was a bit disappointed until LotSB came along. I then felt as though Shepard was more than an avatar; she was a living, breathing character. She had worries and hopes. I hope we get to see scenes like that in ME3.
I'll leave you with another puppy dog eye shot from earlier in the scene from the other one. This one is a little more hurt looking, bless her.

ETA: I nearly missed the gun-pointing party. Can't have that!

Our sentiments aren't that far apart. I agree that it would be awesome if they delved more into how Shepard was feeling (though I can understand why they would leave those parts out), but the potential for emotional exploration in ME2 was clearly a step up from the lack thereof in ME1. Yep, I get what you mean.
Now that I think about it, she was pretty much the stalwart Commander in ME1, although they did have a few moments where she seemed more vulnerable. ME2 had a few of these moments too but I just wish they'd touched on them more. I don't want Shepard to break down into a blubbing ball of cry, I'd just like to see her open up to the people she's meant to think of as friends.
I think it also depends on how we roleplay the individual Shepard too. My canon Shep would be more inclined to seek out a confidant (in her case, Liara) and vent a little, whereas my RenShep would keep it all bottled up.
