Realistically, you would remove your helmet for all talking scenes and wear it in battle. However, since ME2 has no toggle option, you are forced to just leave it off.
In ME1, I guess I could technically toggle the helmet constantly back and forth...but I'm lazy. So I just leave it off and pretend I put it back on in combat 
That's pretty much how I view it as well.
I really hope they bring the toggle back for ME3.
this is one where i let it be a little unrealistic in my head canon. first, kyrie being an adept, i assume in battle she has up a constant barrier. it's part of her personality, plus to pull off barrier AND other stuff is bada**, imo. so she could conciveably go without a helmet in situations where there is reasonable atmo to breathe.
i modded in the breather mask, which is totally ridiculous in most situations, since in a vacuum, your eyeballs would get sucked out and all that stuff if your body wasn't in a fully sealed system. but for this, i ignore it and do it since a) the other human squaddies do that and

i want good screenshots. to my surprise, shep is actually well animated in helmet cutscenes, so i like seeing her expressions. on the flotilla, esp., she has some priceless moments, and i get sick of seeing screens of helmets all through that.
but when i write the fanfic, kyrie either has on barrier to stop bullets or a helmet for no-air situations.
