(That and human lifespan in Mass Effect's time period is supposed to be up to 150, so maybe that involves a treatment that slows down aging like prolong from the Honorverse.)
Yes, it's been a gradual process over the centuries. It's logical that 30 then will not be the same as 30 now.
Healthier living, longer lifespan. Evolution.
Having said that, 30 is far from old, and anyone who thinks being 30+ means your skin is shot to hell and you're wrinkled is just dead-wrong. On the bright side, if you'd ever try to guess someone's age, I don't think the average 40+ year old would mind you thinking they're 10 years younger.

Saying femshep doesn't look old enough to pass as a 30 year old makes asmuch sense as the following:
Assuming the average male is bald by 40, a similar statement would be to claim that all males past 40 are bald and using a model of a male that's NOT bald supposedly past 40 is unrealistic.
As to the old default, she was just flung together if you ask me, she looked good yes but definately wasen't a beauty queen per say, because she doesn't follow beauty standards in therms of proportion and spacing of facial features. Asmuch as that makes her look more realisic, it was also (as i'm guessing) not done on purpose. She just got little attention.
Now she is being well-designed and like Sheploo (who was sculpted after a dutch male model), she is now also getting a makeover agreeing with beauty-standards.
This is both logical, and on equal footing with Sheploo. Wether we pref this over the old default is something else altogether. And as to her looks, it's different, but in no way unrealistic for the pure fact everything is possible.
Soldiers (or anyone for that matter) don't have to look like they had an unfriendly incident with the front of a speeding vehicle.
