Your Shepard's "Enjoy the flight" reminds me of Jack's "Fly, b!tch!" when she performs Pull. She always says it in this sort of bloodlust-filled tone that just makes me think, "Crap, someone went and pissed her off. Oh look! There goes a Collector!"
Speaking of that one month prior to the destruction of the Normandy, what was your Shepard doing at the time? I remember reading one conversation, I think Sagequeen was involved, about the timespan between the end of the first game and into the second. Some were saying one month, other said three. Regardless, there was a lentgh in time that's sort of up for grabs and open to interpretation.
I think my Shep did a little target practice, working on her fire arm skills to offset her biotic talents. Other than that, I could imagine her hanging out with her crew when she had some down time, watching movies with the crew of the SR1, having some down time with Liara, talking with Chakwas. She tried to get Garrus to watch the Dark Knight with her, but he was a bit busy working on the Mako.

Hrm, I think Thane talks as much as any other squadmate. There was one instance where I told him to go behind some crates and he replied "Placing my body under cover!" I and my Shep were both like:

Seriously, Thane? It just didn't seem to be like something he'd say, in my opinion.

Wow, the contrasts between the two women's clothing is very...bright! And I can imagine Kasumi commenting on trying to get Shep into some fancier clothes, other than "You should wear this stuff more often! You look great!"
