Also, human because I don't see any conceivable way an Elf or a Dwarf can become Champion of a human city with the way race relations work in Thedas

Presumably White but it would be nice to have him have a little bit of Native American in him. Nationality wise I would want him to be French!

I'd pick an elf, because I love what they did with elves in this setting. However, I completely understand their decision to go with human. Humans are much more far-reaching as a playable race than elves or dwarves.
