I guess the closest thing I have to a Canon Shep will choose Tali over Ash [I'd love to see the whole you're choosing a bug over me thing ... heh]

First off there is something special about Shepard that by a superior genetics in combination with life experiences has created what can be considered the pinnacle of human evolution. The solid foundation (genetics) has allowed Shepard to survive what what has killed many normal humans.
With that in mind if i was say the galactic overload and i was trying to advance the human species further it would be most imperative that Shepard reproduces that genetic sequence back into the geen pool by either collection of male genetic material for use in invitro fertilization, or the harvesting of eggs from the female Shepard for the same procedure. Conceptually it is like breeding cattle, if you have a holstien that produces 30% more milk daily on the same resources as the rest of the herd, that holstien is going to be your breeding stock as more milk on the same resources would be considered a bonus to the farmer.
As uncomfortable as that sounds when applying breeding techniques to cows is applied to humans for the betterment of the species there is only one choice. Shepards of either flavor, male or female, need to reproduce as often as possible with as many different partners as who would also bring something special to the mating, for the advancement of the species. In that regard, Miranda, Liara and Ashley would be acceptable breeding stock as thier attributes are a known comodity. For the fem Shepards your kind of left with duds in either Kaidan or Jacob, so a little egg gathering might be required if during the rebuild process Cerberus has not already done so.
Twisted but logical as well, something to ponder.

What made Shepard is 50% luck of being in the right place at the right time, and 50% determination to follow through with what [s]he believed in, regardless of the obstacles. Neither is really transferable on the genetic level, and it's really rather questionable to what extent did Shepard's pedigree play a role at all. Hell, Earthborn Shepard's parents (and their genes' quality) aren't even known.
As for the OP question... in my playthrough, John romanced Ashley but ended up sticking with Jack in the end. Jane got slightly drunk once and made a pass at Garrus, but later they both agreed it was a silly idea, and she decided to stop drinking before she ends up flirting with Grunt... so in the end she stayed loyal to Liara.

ME3 LI: "It's me or her! Pick one! Do you hear me? One!"
Shepard: "Yeah, you know what? I'm going down to the club, showing my face for ten seconds and taking home the first three groupies that throw themselves at me. Because I'm the biggest goddamn hero in the goddamn galaxy."

Above: Commander Shepard, thirty years into retirement.

And lately there isn't much about Shepard that's NOT artificial, enhanced or altered in some way. I wonder what's even left of the original Shepard...
Anyways, some of my Shepards are very much broken themselves (lost half their respective teams, sometimes more, etc.), and don't really feel like romance.

Shepard 2: Liara and Tali. Sorry Liara, but I only romanced you in the first place because Tali wasn't an option. I lied through my teeth to get you in the sack.
Shepard 3: Ashley and Tali. This is my jerkwad playthrough who only romanced Ashley in the first place so he could ****** her right off by dumping her for Tali.
Shepard 4. Ashley and Miranda. Dump them both. Notches on the bedpost only.
Shepard 5. Stay true to Tali throughout. This is probably going to be the "canon" playthrough in my eyes.

My Shepard stayed loyal to Kaidan in all play throughs except one, where I chose the opposite of what I would normally do in almost every circumstance. She romanced Thane in that little experiment, but I'm not sure I'll even bring that play through into ME3. Even if I do, Thane will likely be dead by then.

since I don't like Ashley one bit and,
Tali isn't that interesting to me
Miranda just is't my thing,
Jack is cute and all once you get to know her
guess it's true what they say that............
Once you go Blue, nothing else will do , so...... there can only be Liara for me
and for my playthoughs without an LI from ME1 it will have to be Jack above anyone else,
since she has the most interesting backstory and for the reason above
so who's heart am i gonna break?? i guess none .....
Unless..... Morrigan finds out LOL:P

Miranda is quite frankly the hottest thing to walk in Cerberus-issued clothing, whilst Tali really got to me emotionally.
If its just about the sex-thing, then i'm better off skipping both Tali and Miranda, since getting it on with Kelly doesn't punish me in any way in regards to my love interest from ME1 cause we're just sex-buddies. And it is more gratifying to watch in the captain's cabin. Damn, that yeoman of mine sure's got some hot moves! ^^
But if we're talking true romance.... i don't know.... i guess it boils down to how hard i'm taking the whole being-dumped-by-Ash thing and if I am truly attracted to my squadmates in ME2.
I am currently going with Tali, cause i love the whole alien-bit and also, in truth, she cared for me and was so very cute.
In the end.... if it is between Tali and Ashley..... well.... we'll see what kind of dialogues and options Bioware puts before us in the third installment...
.. maybe you can have TWO Li's ..?? ..

While staying 'faithful' as it were will get a reward, hopefully changing your LI won't 'punish' you

At first glance this will seem odd but i tend to take a longer view on most things so here i go.

Wrong on the Liara part. Asari produce 100% Asari. Shepard's genes would not be present in the offspring. Only Miranda and Ashley (and Kelly, though she's technically not a romance) are viable, if you are looking at it that way.
And more on topic, my Shep will be breaking Kaidan's, if she gets the option. Though she expects him to have moved on already and would consider it more tying up loose ends. She doesn't want to deliberately hurt him, but Garrus is her true love.

Even if Thane dies in ME3 my Shepard won't go back to Kaiden. He really disappointed me on Horizon! <_<

I think I will stay with Miranda meaning Liara is gonna get hurt. Again I just prefer my own species. Also I don't like how Liara acted in ME 2. I mean come on I come back from the dead all she gives me is a small kiss!!....SandTrout wrote...
Asuming you took romantic interests in both ME1 and ME2, who's heard would you have to break, asuming you have to choose only one in ME3.
My Personal Canon Shepard romanced Ashley in the first and Tali in the second, and though I love Tali, I really would have to break her heart if Ash could come back into my life. I'm sorry Talimancers, but when it comes down to the fine line, I'll always side with my species. It's not gonna be something I'm happy about, but it will mean a lot when it happens.
My Renegade would choose Garrus over Liara though. Tough luck hun.
Who would the rest of you choose?

...I make a playthrough where I pick the former, then one where I pick the latter. Teehee.
But in all seriousness, I guess I'd have to pick Kaidan. He doesn't have hallucinogenic effects.
