After you complete the suicide mission, and beat the game, will you be able to continue playing DLC's and incomplete assignments, and upload the save to ME 3 upon release? For example, I beat the game, then beat the overlord dlc after; If I save and import that charecter to ME 3 upon release, will it keep log of my post game decisions?
About ME 3, and my current ME2 SAVE FILES

If you play DLC which have decision flags for ME3 then yes (not sure if they do however). Your saved game file should have a list of all decisions which get flagged if/when you make them. It also has a 'completed the suicide mission' flag which, when flagged allows you to import the file into ME3.
I doubt it has to do them in any particular order so in essence you could recruit a team member after the suicide mission and it will still have them flagged as recruited for the transfer to ME3.
