What is better, chicken or steak?
How about a little information on what role you want the character to play, rest of the party composition, etc? What level were you thinking of dualing at?
In general it's a question of druid spells (iron skins, fire elementals, insect plague) and a couple of extra dual wield ** vs berserker rages and being able to get ***** in a weapon.

Me = kensai\\mage chaotic evil
Minsc= berserker\\ranger - cleric
Imoen= swashbuckler\\mage

If you're doing vanilla SOA, it won't really matter - your team is more than sufficient to beat the game.
For TOB, the enemies will hit a lot harder and there's more higher level mage battles, so Iron Skins and Insect Plague would be better against the tough TOB battles than Berserker Rage, especially since your saves will be pretty low in TOB (esp with a 3-man party) and you'll have a large equipment selection to choose from; so the only real benefit there is Maze/Imprisonment protection. The Berserker Rage is much more useful as a catch-all protection earlier in the game when your saves aren't that good.
Personally, I would go with a R/C multiclass not dual class so that you've access to Hardiness and GWW/Critical Srike as HLAs (the Cleric HLAs are not that good compared to some other classes). You can also do the Harm/Critical Strike trick if you want.
You only really need half a cleric anyway, especially in a small party like that.

ranger cleric is so extremely awesome for a party with mages. it will save you lots of healing potions to begin with. secondly, it has awesome summons like fire elementals (although skeletons suffice too). summon nymph is also cool. earth ele is not that bad either. And my favourite thing about r/c is nature's beauty spell:
1)mage casts greater malison: -4 saves all;
2)r/c casts nature's beauty which guarantees blindness(-4 saves even more to a total of -8. add doom for -10!) and even kills with a +3 saves bonus everyone in the area.
3)your party uses whatever you desire: hold person, emotion, chaos, chroma orb, petrify, fod, slow etc.
4)lots of monsters dead/disabled.
try resisting magic with -8 or -10 penalty.

Also, I've always found the Bersererk Dualed into a Mage to be far more worthwhile (e.g. powergamed) than Kensai. You're trading a little bit of damage for the Rage immunities, which IMO are far more worthwhile and useful than a little bit of extra damage.
