It's a trained hawk. Every time Hawke opens his mouth a bird's loud screech comes out.
But yes, I would like to know who the voice actor is. I can't imagine we'll find out until we hear his voice, though, which could be a while. On the other hand, it might be sooner since Hawke is the main character and we have a trailer coming up in a few weeks.
