Batman: TAS because it's Batman, but it's also my favorite rendition of Batman ever and that includes the recent live action films. To me, this version of Batman is who springs to mind when I think of the character. Mask of the Phantasm was also awesome. Unfortunately not all the movie tie-ins were, and some episodes were dodgy, but on the whole I loved this show.
Justice League and Justice League Unlimited for continuing the tradition Batman: TAS set. There were times I honestly wondered if I was really watching a superhero show for kids.
Teen Titans for its share personality and balance of comedy and drama. It was very pseudo-anime, but I still loved this show. I disliked how the series ended on an anticlimax due to unexpected cancellation, but I still liked this show.
The Real Ghostbusters... well, at least before it became dominated by Slimer.
I decided not to mention any anime since it's commonly discussed. On the topic of Avatar, I enjoyed how it ended despite its admittedly Deus Ex Machina quality. It made for a dramatic finish and to be honest, Aang just killing Firelord Ozai wouldn't have felt that fulfilling to me. All of Aang's friends and the past lives he consulted said he had to kill Ozai despite how it went against his monastic teachings. Him killing Ozai would have been more realistic and probably led to a less happy go lucky ending for him, but it also would have been predictably boring. And since the show was ending we would never get to see how his feelings toward taking a life were explored anyway. What did bother me was how rushed the ending felt in general. It needed its own episode in my opinion.

Boondocks- First season was alright, but every episode had to have some deeper moral point, second season started to do away with that, and now third season is full of just plain fun episodes. No more "black rights this and black rights that" now we get epic anime style kickball games with breaking bones and shattered skulls. Its a clever show with some of the best characters I think I've ever seen. It's funny as hell and has surprsingly awesome fight scenes.
Squidbillies- Just plain nuts...
Adventure Time- it's like if an acid trip was a sentiant being and could it's self get high. I cannot even start to describe this show anymore then that. It's something everyone should experiance. This show would fit in right along other Adult Swim programs, only it's during the day, which is a major shocker considering what they get away with.
Side-Note Do you know Nick is making another airbender series, and no cheap rip off, this is by the creators of the first one! It's all about Aang's granddaughter. Aang's dead though

Actually, about the new airbender series, it focuses on a young water tribe avatar who is trained by Aang's son Tenzin. That is what has been confirmed so far.

Not sure why you would think that Cowboy Bebop doesnt count, perhaps because it is too awesome to be compared to the other animated series listed in this thread? But as others have said before me yes it does count.
However for me it is a toss up between Cowboy Bebop and Samurai Champloo (if you enjoyed Cowboy Bebop I recommend you give it a go).

American Anime is a contradiction, for the record, but I do know what you mean. And I think you saw Spectacular Spiderman and The Batman (as oppose to the older, better Batman: The Animated Series) because they both fit that particular aesthetic, one I happen to not mind at all, although it is evident that one's mileage may vary.
