I changed my XBL gamer tag a while back, and on my Dragon Age profile stuff...nothing's updating, and it still has my old GT. How can I fix this? Thanks.

Snoteye is correct. This needs to be done through EA Customer Support. DLC is tied to your EA account, that is the account you use to log into this website. Your Xbox gamertag is also tied to your EA account. Some ME2 DLC is assocaited with gamertags but it will not be lost if you change gamertags through customer support. When you are talking to EA Customer Support ask them to re-associate your ME2 DLC with your new gamertag.
