10. Finnish Cabbage Casserole

The recipie says 500 grams of ground beef, but I'd use a little more - maybe 700. Also, I wouldn't put the rice in at all - I think it's unnecesary.

It's delicious, and is great for re-heating and eating later - the taste actually improves as it sits in the fridge for a day or two. :wizard:

5. Mashed feta cheese with oregano, thyme and olive oil (it's not really an actual dish, more like an appetite I discovered myself).

This in not an ''official'' dish, therefore I couldn't find and link the recipe, so I'll present here how to make this appetite.

Preparation: Mash the feta cheese (about 100-200 gr.) with a fork (do not overdo it though - you should mash it until medium and small sized ''clots'' of cheese are visible). Add a spoon of oregano and a spoon of thyme. Then stir them with a fork and start adding olive oil until the mixture feels ''well greased'' (I couldn't think of a better way to explain this).
Note: If you overdo it with the oil you will notice an oil pool at the bottom of the bowl in which you are stirring the mixture - if you haven't added enough oil, the mixture will be hard to stir. Also note that olive oil is quite ''heavy'' and that you need a small bowl to prepare this appetite.

I love eating this with bread but it can be eaten with anything you like.

3. Finnish Pea Soup

Another quitesentially Finnish dish - it makes for a great, hearty meal. The carrots are optional - I prefer pea soup without them. The meat mentioned in the recipie is the best to use, but if you can't find smoked bones/knuckle, you can substitute it with, for example, smoked ham. Also, how much meat you use is up to you - you can have a completely vegetarian version, or you can use more than in the recipie. Either way, the soup is very tasty.

When served, you usually have a mild mustard on the table, as some people like to add mustard to their soup. Also, chopped raw onion is another possible topping.

This is actually a curious dish in that it tends to taste better the bigger the batch you make, and the bigger the pot you use. Consequently, you can get the best pea soup in the Finnish Army camps, where they cook it in huge soup "cannons" for the troups. It's been a long tradition that in the Army, pea soup is the dish served on every Thursday (followed by a Finnish version of pan-cake for desert).

This makes Thursdays a very popular day in the army! :o

A few years ago the army actually tried to change this tradition, but quickly reversed that decision in the face of a big outcry from the service-men.
