Well, in humans at least the blood color is caused by the iron/hemoglobin thing, isn't it?
I assume turians use something different. If their respiratory/circulatory system works in a similar fashion. Don't think it's anything to do with chirality.

Hmm. Good point. And the encounter with Dr. Saleon/Heart suggests many different blood colors. It sounds as if her flesh tone would be a combination of basic skin color and blood color. But with no melanin or its equivalent, the skin would (perhaps?) be very pale. So blood color would determine it, would it not?
