Even if they're somehow not extinct, the Grey Warden's use them. Not someone trying to become the champion of Kirkwall.

Maybe she'll turn into a Griffon and with another Mage (Male) shape-shifter make an entire troop of little Griffon feet marching across Thedas to serve the Grey-Wardens once more.

Only if we can fly 'em. Which we can't, so, no griffons. Oo, though maybe we could find a griffon egg and then we can choose - either hatch it into a baby griffon, pop some jewels on and have yourself a nicely decorated faberge egg, or an omelette. Eh? Major choices in Dragon Age 2!

Huh, I managed to convince myself that I'd seen something about the player finding a griffon nest...maybe I dreamt it...
It'd be wondrous if we could rediscover a lost griffon breeding ground!! I think I'd collapse into a puddle of overjoyed slime if that happened!

Yeah they were. Dragons were thought to be extinct until one went on a rampage in 8:99 which is way they decided to call it the dragon age, after the dragon was sighted. They were thought to be extinct.
So griffons can come back to.

Which means that the third or fourth game in the franchise might be called 'Griffon Age'?

i don't think it will ever happen but think of it like this:
DA2 is a story that has already happened it is told by someone else and it spans 10 years
so why can't an other DLC , expansion or even DA4 (DA3 will probably feature the OGB)do the same
but instead of spanning 10 years it is a "Legend" being told by someone and set a couple of hundred years in the past?
remember the story that Wynne told you at camp about the legend of the grey wardens that had the Griffins in it, you could even ask if the story had Griffins in it
so it would be very easy for BW to bring back the griffins but will they??
