I saw that this can be played on an iTouch?
Would a first generation 8GB iTouch suffice?

Well, this is straight from the ME Galaxy site on Apple's site:
Requirements: Compatible with iPhone, iPod touch, and iPad. Requires iPhone OS 2.2.1 or later.
So i'm guessing that your Ipod Touch will do, since they don't specify any versions of it. As long as your OS version is 2.2.1 or above, you should be fine.
