It doesn't seem like it is necessary to actually be playing with a party member (in your combat team) in order to unlock either a romance or specialization, is it?
So as long as the NPC's approval rating is high enough, you should be able to get whatever you want, correct?

Me, playing the noble knight, was not getting very far with Morrigan until I could leave her behind. Then I could ply her with gifts and conversation that fits her personality. She just couldn't stand watching me waste my time with "useless pawns".
Leliana, on the other hand, is practically drooling over me now that she's seen my noble self in action. No gifts required, just a little chivalry.

Since he makes comments on things you encounter and you gain additional conversation options.
If you ever visit Haven, bring him along, right in the beginning you can get +7 (or was it +8) to his affinity.

One that doesnt believe in helping the weak but only in self preservation by any means necessary (and I mean ANY means). If you want to boink morrigan play a character closer to her personality this is one of the few games that really lets you do that in a logical sense.
I guess thats what your interpatation of "Noble" is. Through out history the Nobles do the same thing the peasents do behind closed doors.

Well a Noble Knight who didnt uphold the laws of the land wouldn't be much a noble knight no matter how you want to justify it. So in the end youre just trying to boink an apostate, a criminal, an abomination to the order of things. In the context of the game world none of this makes sense so dont be surprised that you have to skirt the mechanics to make it work.
Trust me it would be a lot more rewarding in gameplay to just ignore her romance until you do a playthrough with a character better in line for what she is looking for youll have a lot of fun delving into that more self serving aspect of the game.
I know the boobies are hard to resist but stay with it
