I actually wondered that myself...
But the only thing I can make out is some gibberish that sounds like
*prepare for awesome language detection skillz*
Souvo misin Asari Samara misin Asari, souvo misin asari samara misin Asari...
yeah..., well at least the Asari and Samara part makes sense, but the rest?
I have no idea what's actually being sung there.

I always heard 'I want to eat the wasabi'. But that works too.

WASABI!!! The green descendant of hell! YAY! Samara just got more badass as she already was if she really wants to eat Wasabi!
That stuff is nasty, ... and I normally like it hot, which is why I was as dumb to get quite a bit of that stuff on my Maki ... thank god I had Sake nearby, woah!

Sorry to bump a three-year-old thread, but I just stumbled across the answer to this question, and decided to document it here for any Googlers who happen to find this thread. And for great justice.
Jimmy Hinson (Big Giant Circles), who contributed to the ME2 soundtrack, released a free album of ME1 remixes called Max Effect. In the album readme, he writes:

Fun fact, if you listen to the boss theme for Samara, I actually wrote the words “Samara The Mystic Asari” for the choir. And here you probably thought it was some deep latin chant or something didn’t you? :]

There you go, I'm a straggling Googler, so thank you very much. I love Clays interpretation in light of ooburns explanation
Couldn't make more out of it myself though. Ehehehe... fun.
It's a damn good track, too.
