We all have seen it's pretty easy to add/delete spells/stats/xp/skill points/relations etc. But how do you had the unlockability to specialize. For example, let's say you are a warrior, and you want to specialize in berserker, but want to do the mage tower first. Where in the saved game file do you edit which specializations you have already unlocked? Thanks

It's probably not in the save file, as it is account wide. Once you unlock it in a game, you never have to unlock it again on another playthrough. I think it might be stored as an achievement on the website. Might be lurking in a file somwhere at our end, but not, I think, in the game saves.
However, there are books that unlock certain specialisations. It may well be possible to use them as a template to make more that unlock the other ones.

I haven't been able to find where to add/delete spells, the search function for the forums isn't working for me right now.

If your a mage and let's say you have lightning and want to add shock(notice you need to keep them in order....you shouldn't go from lighning to tempest without shock), you just open up your .das file with the toolset and add a line and add the right spell. There are plenty of tutorials on how to do this. Go to the toolset forum to find them.

Specializations are just like other skills, spells and talents in the save-file. If you want your warrior to be a Champion, just add 4013 in the talent section, where all your other talents are.
Unless you are talking about unlocking them only, so you can select the specialization in the level-up screen. Arkenor is right on that part, as they're not in the savefiles. Don't know where they are stored though.

I haven't edited these, but it looks like
Settings/Profile.dap
