If you right click the chargenmorphcfg.xml file and then click edit the file will come up on notepad (might be called something else on a different system). When that comes up take a look at how the chargen files are organized.
First part is the presets (under the /heads section) organized by race and gender (DM = dwarf male, EF = elf female, HF = human female, etc.) and then under that the sections will be labeled /hairs, then /beards, then /haircolors etc.. Once you figure out the lay of the land (so to speak) it gets easy to edit them and add things.
This is what I do: If I want to add some presets to my chargen (as an example) I go to the race and gender I want to add presets to - lets say human male - so I go find the human male section of the <heads>:

Then I'll copy a line (include the spacing - that's important. All the lines have to line up exactly as they are shown in the chargen so make sure to keep them all together), paste it under the last line, and then just delete what's in the quotes and add in the file name of the new preset I want to add there.

You can do this for everything else (hair colors, hair styles, eye colors, etc.). It takes some getting used to but once you figure it out it becomes easy. Oh and any additional presets, haircolors, etc. have to be in the override folder (usually mydocuments>bioware>DragonAge>Packages>core>override) to be used by the chargen (as does the chargen.xml as well).
