Is there any way to find out what exact powers & properties enemies have? E.g. the exact number of magic resistance of baalors, dragons and the spell-like abilities of beholders. 

I take it the monsters that appear in Infinity Engine games don't follow Monster Manuals to the letter?

You can use tools like near infinity. Download it, open it, point it to you BG directory, and you will be able to examine the information for all the creatures. It might not be as simply laid out as you'd like, but it's all there.

Near Infinity is great, and will tell you pretty much everything you need to know, once you get the understanding of how to use it (not too terribly difficult). Also, you can always use the cheat keys of "Ctrl-Q" on ANY NPC and add them to your party. Just make sure you save before you do this. Once they're in your party, you can look at their character record page and see resistances, THAC0, what's in their inventory, AC, etc. You won't be able to see hidden effects, like what weapon immunities they have (like you need a +2 or better weapon to hit them, etc). That's what Near Infinity is for =)
