I imagine hides and meats would be an important part of the economy.

You mean like those bob evan's gourmet meat baskets I get around christmas?  Could work...

Bob Evan's trout baskets?  NEAT!  But I also had crafting supplies in mind, as well as plain old pelt trading for the commoners to engage in.

I'll trade you six wolf pelts for the duskwood bowstaff and that lump of iron ore you got? Interested?

You're trying to rob me in the politest way! Six wolf hides? Look I have to feed my children here. I can get you the duskwood bowstave for six wolf hides. The ore? That's gonna cost ya.

and so forth...

It would be incredibly awesome if barter like that was the actual ingame economy and gold was never used (even if gold was used behind the scenes to figure out the trade ratios).

That would, indeed, be cool. It would also make conversation skills worthwhile. Barter, Appraise, Persuade, Sense Motive, all would be useful in such circumstances, though it would most definitely be writing intensive, especially for the haggling portions with all the taunts, insults and lamentations necessary to make it fun.

I'd definitely be up for that, though.

Well, we should start off by finding the components ofa barter. DNO already named some: Appraise, Persuade, Sense Motive, haggling, taunts, insults, lamentations.

Then we come up with a simple mechanism. Then make a prototype. Then improve from there.

The computer programmers will probably know a few useful mechnisms such as Finite State Machines.
