Exactly That's right where I start to go... not so much for me. I'd really enjoy watching him jerk her chain, but them Chantry folk have some really strange notions of what's "acceptable". (Talkin' 'bout the lengths to which they'll go when they want "The Truth".)
For me, I just find the idea of Varric having to "spill it", willingly or not, embellished or not, if he were actually (allowed to be) Hawke's Lover, too creepy to contemplate; both the WRITING of the relationship, (if that were to be a possible branch) and any participation in it as the PC.
Whereas if he
weren't even a possible Lover, (or ex-) then any and all stories he tells, including ones of his BEING such, take on a completely different, mostly humorous, (and possibly a sweet/sentimental) aspect!
"You tell 'er, Var! Make her sputter, and sign, (and sigh) and reach for the Apothecary's nostrums!"

But I totally understand that for other "Hawkes", a "Paragon Stout Rune" holds a certain, (even an
incredible) attraction!
