The exaggerated tale at the start might be a way to antagonise Cassandra and to just serve as a message of utmost distaste towards her.

I'm not sure where all this madness (i.e. awesomeness) originated from, but I have that kind of impression of Varric because Mary, IIRC, mentioned something about being glad to finally write a funny NPC that can crack jokes with the player. After all, she wrote Sten and Loghain last game around and, while both those fellows have some funny moments (Sten's awesome deadpan and Loghain's dry "Mr. Snarky Pants" moments in camp dialogue/banter), neither one of those were particularly "jokesters". She gets a break from the Serious Frowny-Face types this go-round. Good for her!

I seem to remember Mary coming in and saying he's the sort of person you don't want to let talk, while you might be right it seems to suggest it's part of his personality in general.

While possible, it would require a whole new sprite of Varric carrying the crossbow (adding a lot of complications if the crossbow is too big). Add in the guitar player, you'd have more problems with either having huge guitar-players killing everything easily or being too tiny to even show the details.
Plus I'm a firm supporter of Varric being a dual-wielder.
