Okay, here are a couple things regarding the general lack of armor so far for companions that I feel need to be out here;
Armor was expensive. A full set of armor back in the middle ages was not something you could find at your normal weapon's shop. If a family was fortunate, they would have one set of armor that the patriarch of the family would wear. Soldiers in the king's army would usually have chainmail, a helmet and a breastplate in the way of armor. Otherwise, people made do with chainmail and leather armors. Which; if I may point out, looks like what Aveline has been seen wearing.
People didn't always gravitate towards armor, there were people who went into battle naked. Naked. Preferably, your weapon and/or shield was the only defense you needed. Avoiding being hit was preferable than being able to take hits.

Maybe she is working as a blacksmith in Lothering, during the time of the attack. Would explain her apron thingy I guess. I am sure there are hundreds of explanations to why she doesn`t wear an armour at that point in time.

It protects her core, which is what an enemy would most likely swing for. A bullet-proof vest does not cover your entire body, it protects the core.

I thought actual leather armor was supposed to be hardened so as to be tough like wood, not the kind of leather that would be soft and conform to your body shape like clothing.

a bullet proof vest protects your chest....as for the arms she is a melee fighter not a shooter
