I've noticed with my cleric/thief that when I first cast the spell "chant" on an enemy it will make any subsequent castings of "holy smite" always do max damage (get max rolls) against a chant-affected enemy. If a member of the enemy party also casts chant, then this does not work (cancels out my chant). Is this a bug? Or is this a perk/benefit of casting chant beforehand?
The monsters can still make their saving throw to halve the damage, but any damage not saved against will roll maximum damage rolls.
Is this a bug? Something already commonly known?

Not a bug so much as an inaccurate spell description, rather than doing 1-4 points damage per level HS actually does 2*1-2 (half with a save). Since Chant increases your damage rolls by one you will always inflict the full 2pts/level (or 4pts with a failed save) when casting HS.

Very cool. So the more hit die are rolled, the bigger the bonus chant gives to your rolls.

Do you mean in addition to the manual that you have as a file on your disc(s)? Yes, you could quickly google a whole bunch of opinions on the web, and you'll soon get many replies on this thread.
For druids, the two most universally useful spells are ironskins and the two insect plagues.
For clerics, besides the basic defensive healing spells, you definitely want to have someone in the party who can detect invisibility, and in BG1, the Hold spell is very useful. It never hurts to have a cleric who can cast sanctuary. But if you are starting in Candlekeep, your spell packages are going to build up gradually, so you'll have plenty of time to experiment to see which inventory best fits the way you like to play: very defensive? very offensive? invisibility and backstabbing? The game is as flexible as all hell, so there are no "best" spell sets or weapons.
