As for the UI, that could be worrying I suppose but considering how many revisions the ME2 UI went through I wouldn't be overly concerned just yet. I loved the portraits in Origins too, so I hope they return. There certainly seems little reason to ditch them in favour of purely having health/stamina bars.
The UI for the PC version was solid. I hope they don't try to minimalize and streamline it like so many games try to do. It works for some games like Dead Space where they integrate the UI into the actual gameplay, but more often than not the desire to make the UI less obstructive just makes it more frustrating to see necessary info, I think. IMO, the ME2 UI for the PC was ridiculous- the goofy little floating heads in the center of the screen? Meh.
The portraits in the upper left worked well, and besides, if they moved that info down low, whats to become of the hotbar?

As for the stream, is it just me or are there a ton of cutscenes? It seems like cutscene- combat-cutscene-combat. Hopefully thats just because its the opening of the game, but I hope the whole thing isn't like ME2 where its just jumping from area to area where the combat showing up is painfiully obvious.
