I don't recall "helping her on her pilgrimage" ever being an official part of the deal when Tali joins Shepard. If your Shepard wants to help, fine. If not, that was never a prerequisite. Udina thinks she has useful skills and knowledge, and Shepard either concedes to that notion or agrees.
Her reaction is selfish. She agreed to join up and help stop Saren. The geth data is a miscellaneous thing found on the side of that journey. Tali sees it and says she wants it; Shepard never agreed to help with her pilgrimage, nor did Shepard ever say she would give Tali any geth data she found.
And still, all Shepard does is tell Tali to make an official request of the Alliance because those files are technically theirs. Tali's reaction is, "What?! You won't help me just because I asked?! You won't do as I say!? WHY NOT?! I HATE YOU!!"
