when my main char is a fighter/mage, what will be his class specific quest? will it be the d'arnise keep thing or the planar shpere one or will it be both?

You can get either stronghold (or, without any mods, even both, if you take the fighter stronghold second).
The G3 Fixpack removes the bug where the fighter stronghold quest doesn't check whether or not you have a stronghold yet, but the G3 Tweakpack can give you the option to receive both strongholds anyway.

I believe that if you have the fixpack, the stronghold you end up with will be the first one you get.
