In the games in didn't seem to touch on that subject so I was wondering whether the geth built more geth to replace the one that were destroyed?
Do the geth build more platforms?

Yes, the Geth programs are never really "destroyed," just their mobile platforms. They can download to new platforms and continue whatever they were doing, so presumably they build more mobile platforms to replace losses.
