I agree not everyone always plays their own gender. But the question is how do most people feel about playing as another gender, and because the option is there wouldn't you sell more by advertising it?
But that's part of the problem. The iconic figure is almost always male (tough soldier type) and that's always what makes it into the promotional art and ads. The game is portrayed as something it ins't on the most popular medium and that portrayal turns off a considerable portion of potential buyers.
