Not to go too off topic, but this isn't the only time where bioware gives these little hints and clues about characters throughout the game. For instance, Aria on Omega mentions that the "patriarch" isn't the only krogan she's pissed off, She mentions that she had commando training and that she was a merc, changed her name, and then at the end of one of her conversation strings bioware makes a point of her saying "better luck next time". These little clues might be missed if you don't pay attention, but it all points to Aria being Aleena from Wrex's story in ME1.
My point is that that you shouldn't rule the asari bartender out due to being cultivated by the immersion of the game. Instead, take notice of these little clues.

I don't know... if someone addresses the lack of emotion from Aethyta when talking about Benezia, then I'll shut up. Otherwise this remains a very valid point which lends credibility to Aethyta NOT being Liara's other parent.

Maybe/maybe not, when I was born my mother was 41 & my father 47; mama died @ 103+ and papa @ 96+. I do not know how that would translate into Asari life span, so I would not rule out Liara's pureblood linage stemming from Benezia (mother) and Aethyta (farther). Matrons usually are responsible for raising children. A matriarch of nearly a millennium would be too old for a kid like Liara. Therefore chances are that the bartender is just nothing more than a cool bartender and not Liara's father.

Messing with biotic women who hang around Shepard is a good way to get biotically slammed into oblivion.
1) Miranda when her sister was threatened.
2) Jack when anyone is stupid enough to get in her way.
3) Samra, because you looked at her funny
4) Liara, because trying to show off in from of Shepard is a no no.

I don't recall the bartenders name but is she the same as the one looking at Liaras picture?
edit: also did the bartender speak about her parents so much before the DLC? I thought I had all options covered, but when I went to visit her, I saw I could ask about her parents - info I did not know previously.

Who's to say there was an original story for who Liara's father was? Maybe BW never intended us to find out. Maybe they never gave it a second thought. Maybe they did intend it to be the bartender in the first place. So many unknowns ... it's a bit of a stretch to exclaim BW put it in purely as fanservice.
And for something that, up until now, has been of no importance to the major plot, does fanservice really matter? I think it's nice when the devs give the fans a little nod - it shows they listen. Of course, it only works if they try to give those little nods to as many fans as possible, so people don't feel left out. When you start gettting major nods that cater for one vocal group, and no nod at all to another vocal group, well, that way leads to grumpy fans.
