I bought a bunch of deep mushrooms just for this occasion and when I look in the tactics to use item, the deep mushrooms are no longer there!
Any way around this problem?

Deep mushrooms are primarily a crafting ingredient. I've never noticed them available on the tactics screen, but I've never really tried. You'll probably have to micro-manage them.

They should be in your crafting inventory, and will show up as available in your herbalism menu off the tactic screen . . . don't think they factor into any poisons. . .

I know where they are in the inventory. The problem is that they are supposed to be able to be used to replenish your stamina, but there's no option for you to eat them.

I have never seen any ability to eat a deep mushroom . . .use in potions, yes . . .actually just eat one, no.

Well it's on the wiki page, and PC players are able to use them in the tactics menu...
There is no other way to replenish stamina in this game quickly. This was supposed to be the means to replenish stamina in the same way mages can replenish mana.

in origins, the only way i know to replenish stamina is through spells . . .or waiting for it

Now that I've played both versions... this is correct. On the 360, there is no way to consume a mushroom from any menu, tactics, or even manually clicking on them in inventory.
On the PC, you can put them on your quick bar and your warriors and rogues can just click on the bar, or eat them from inventory. I didn't realize you can put them in tactics. *sigh*
The PC version of the game has many bugs as well, but at least people can make fixes, since I've yet to see a proper fix out of Bioware. Heck, Oblivion had huge patches made be devs for 360. As far as I can tell, Bioware has yet to fix a single broken quest on the 360. Like I care about achievements! I just want things to work the way they're supposed to.
Imagine if your bank's ATM was so iffy about crediting your deposits? Or if your checks may or may not be credited to your bills...there'd be laws passed. But we spend real money on these games, and they produce bugged product that never works as advertised, and they don't have to fix it. Maybe if we were all 40 year old lawyers, this would stop.
Putting my soapbox back into the closet. Just so sick of al the problems, having to come to the forums to read about bugs after every session of playing. I expected more from these guys.
