But if you want an idea for the Collector's Edition, I have a few ideas.
1. A Replica of The Normandy or A Gun with a stand.
2. A Statue of your entire team (Like the one from the Legendary Edition of Halo:Reach.)
3. An exclusive DLC that won't come out later.
4. A replica of the citidel, Omega, or whatever the next big spaceport is.
5. A Geth Head Lamp

After that I would want a model case with all the models that you can get in your ME2 cabin scaled to the same size as it would be if it was real.

Anyhow, here is a list of uber-type items I would enjoy:
1) A very detailed Normandy with removal top as Chris said, with crew members and all (I'd especially like it if it were the SR2 with the Normandy SR1 colors and logos)
2) A very detailed Citadel space station that is collapsible (arms close and open)
3) A LEGION lamp head, where we can change his "expressions"... it would also have classic Legion lines
I think any one of those would be great uber items. Other non-uberish items I would want to have in a super limited edition would be the complete codex on a ME2 datapad, with voiceover as in the game and everything. Your ultimate art-book package, a lithograph, a remote controlled Mako, and special casing like we got with ME2 collectors edition.

Yea, not just a random geth head lamp, but LEGION specifically... that would be awesomeness

Customers can have a custom cover of their custom Shepard... say for example, I send you the face code of my Shepard from ME2, and then you guys put that as the Shepard on the cover of my ME3 game.
I think that screams personalization, and would make everyone happy... but this would be IN ADDITION to the uber item

It's not an item, but I was just thinking about how awesome the developer commentary was for Portal.
I would love that. I would buy the collector's edition for that exclusively if I had to.
The Normandy idea is a good one, I'd say that would be the best that I can imagine.

A Normandy model I'd definitely agree with, especially if in ME3 it gets a non-Cerberus paint-job more akin to the original's style.
Or get whoever made that replica M8 Assault Rifle to do more.
Maybe an exclusive promo figurine to go with the ones coming out soon that can only be got via the collector's edition.
I'd suggest a neat statue illustrating a key scene from the game, but that could mean spoilers so probably best not.

I would say the entire soundtrack of all three games but, I already have the first two. Unless you offer exclusive music, I wounldn't want it in the Collectors edition. And the problem with offering wearable helmet/armor/uniform is not eveyone is the same size so there will be a larger group of people who will not be able to wear the item, than people who could wear it. Though, even if I couldn't wear it, I'd still want one, the idea is pretty awesome. To solve that problem, just give out vouchers in the box and they can redem for the wearable item in their own size.(Clothing items only though)
I know I may be repeating a few items, but that just means I really like the idea of it.
- Anything Blasto. (Seriously.)
- Artbook/Behind the Scenes of Making the Game/More Concept Art!
- Normandy 1&2 , Mass Relay, Citadel models
- Mako as a model or remote control vehicle
- N7 Helmet/Original Damaged Helmet/Eye-Piece/Goggles
- Omni-tool Gauntlet/Watch/Desk Clock
- Pistol flashlight
- Jokers SR2 hat
- Shepherd’s Alliance N7 dogtags, contains just “Shepherd” or with the first name scratched out.
- Harbinger alarm clock. (Lol, I love this one.)
- Mass Effect Encyclopedia/Codex
- Voucher for Normandy SR-1 Uniform/Mass Effect Clothing (A turian/quarian styled hoodie would be neat!)
- Ticket/Voucher for the ME movie/Meet Actors/Special Viewing/Be a part of the movie as an extra. (Most likely would be very limited)
-SIgh- Wishful thinking for most of these though. :\\\\

I'm sure there are a lot of players who don't have any of the soundtracks in question (or, at least not all of them). Releasing a "trilogy soundtrack" with bonus unreleased music could be quite interesting.
And the problem with offering wearable helmet/armor/uniform is not eveyone is the same size so there will be a larger group of people who will not be able to wear the item, than people who could wear it. I've never seen a collector's edition (or any game company, period) create collector's items in different sizes for people to wear. That's a waste of resources. Bungie couldn't do it with the Halo 3 set - what makes you think it could be done here?
Harbinger alarm clock. (Lol, I love this one.)
The problem with an alarm clock (or a head lamp, as many are suggesting) is that, more often than not, they're heavy, delicate objects. Assuming that this will be sold online (and not just in stores), you'll be paying out the nose for shipping and handling charges. It is a cool idea, but it doesn't seem to work as an "uber collector's item".
Ticket/Voucher for the ME movie/Meet Actors/Special Viewing/Be a part of the movie as an extra. (Most likely would be very limited)
ME3 comes out next year, right? How would they create tickets/vouchers for a film that hasn't even started shooting yet, let alone finished pre-production?
This edition needs an item/items that represents the trilogy as a whole. Shepard's N7 helmet, the Omni-Tool, a Mass Relay, a weapon...something that ties the whole thing together. No kitschy items like remote-controlled vehicles. It has to be worth the extra premium you pay for it.

God, I hope not... that would be incredibly trite doing it twice in the trilogy. I'm hoping we still have the SR2 in ME3, though hopefully with a slight redesign and de-cerberized.

Personally, I would love a scale replica of the Mako around the size of a shoebox, with a removable top to see the interior, transparent windshield and roof ports, independent 6-wheel spring suspension, rotating turret, sound effects, light-up jumpjet exhaust and opening side hatches. If an improved & tweaked version of the Mako were to come back in ME3 (oh please, oh please!), it could even be based on that, which would likely have some additions and an altered design.
