An N7 Helmet would also be awesome.
Also, a few smaller exclusive things would be really good too - like a mousepad or dog tags etc. Not just the one big thing. I would pay mega bucks for something this awesome.

As for physical goods...
A predator heavy pistol, or perhaps some of the other ones (I preferred some of the ME1 models). But make it functional! By that I don't mean make it so it can kill people, but make it so it has the collapsing action that ME weapons tend to have. So, a button press expands the gun... AND changes the color. As I recall the glowing vents on guns can change color when you arm the weapon. I'd also recommend making it from something that's pretty durable, not some cheap plastic thing that'd break after you expanded/collapsed the barrel several times. I don't know if metal is "space-tech" enough, but there's bound to be some option that would work. Perhaps a hum when you arm/expand the weapon, A ME sound effect on trigger pull? Realistic weathering... and appropriate manufacturer stamps of course.
A pistol like that makes more sense to me than a rifle, as the pistol is used by more classes, and is typically the go-to "conversation" stopper sort of weapon.
The pistol also would just look cool, I find I prefer that option to the helmet or normandy.
The normandy seems more like Joker's thing, he "controls" it, sort of. Shepard is the commander, but with the exception of the end of ME2 - none of Shepard's ass-kicking or decisions happen with/because of the Normandy, when it does - it's Joker that's doing the "cool" stuff. The ship looks cool, for sure, but it doesn't seem that representative of Shepard.
The N7 helmet is a cool idea, but I have two problems with it. Guns are one-size fits all. Night Vision goggles could have an adjustable strap. Everyone's head is not the same size though, and you can't really get around that with a helmet. An unwearable one isn't so cool either. And let's face it, if you put time into making a face, or you care about the characters, you probably spent more time looking at skin than any N7 helmet. It ends up poorly representing Shepard for most players (and he doesn't wear it on any game covers either.
edit: It should go without saying that the gun would probably need a stand, and the glowing is important, as a gun rigged to glow blue unlikely to be mistaken for "real" by anyone.
As a side note, ample consideration needs to be given to in-game collector's/super-collector's edition items. While I don't regret getting the collector's edition, I felt like the items wound up being a booby-prize of sorts since you couldn't toggle the helmets, Shepard would just look like a bug in every scene of the game. The rifle wasn't "bad", but it's advantage was extremely situational. I found myself being jealous of people that got the incisor (which I know everyone can get now...) because while it was still situational, it was considerably more useful.

And if not a weapon, then I would definitely want a big Normandy SR2 on my desktop. That would be sweet!
And if not that, then Shepard´s helmet! And it should be wearable, unlike the Mater Chief helmet!
And even if its none of the above, you´re still the best game makers of all time!!
