I would love to have various kinds of stuff in it, though in regard of my moneybag, I would hate to see all the possible little miracle extras unavailable to me due to price being to high.
Here's my list of stuff I'd like to see in:
-Fullversion of ME3
-Some type of exclusive ingame Bonus, like a Spectre themed Weaponset and Armor (interchangeable parts of course)
-Soundtrack of the whole trilogy
-Bonus DVD with the following content:
->Afterparty like comments of the crew, how they felt to work on this particular trilogy, what they expected, what they feared, etc.
->Blooper Reel! You can't tell me with all those recordings that noone ever broke it or couldn't hold a maniacal laugh. I bet you have a DVD of those for your employees to keep them smiling all the time (I would at least!)
->The mandatory Making of, but with focus on Making of the Trilogy!
Something nice to put beside the PC, for example a Sheploo Bobblehead that constantly yells something about disingenius assertions, deal with it or how the galaxy is at stake and you should fic the problem yourself. Another thing, less excentric and probably cheaper to produce would be a high-detailed SSV Normandy SR1 figurine made of Steel like the one we set in the Crashsite DLC, just colored.
I really do not have an idea how much such things cost to make in sufficient quantities, but I really want the Limited Edition to not exceed the pricing of 80 Euros (Germany, for reference).
Maybe random version of a little signed Lithograph, displaying an important character with the respective Voice-Actor having signed it (for real!). That would be something to collect and not only let it dust on the realms of a locker ...

This was part of Amazon's exclusive bundle with Gears of War 2. Which leads me to my other point. Don't kick PC gamers to the curb! Activision completely ignored us when they released MW2 Prestige Edition. The same is happening with Black Ops.

A scale size replica Normandy (model 1 or 2, either would be amazing), if protected correctly would be the most amazing idea ever.
For the full set of collector edition content I think something along the lines (or exactly this preferrably) of this would would be perfect.
Scale Size replica Normandy model (which can be opened horizontally [if that doesn't make sense, I mean the it opens horizontally in the middle of the ship]) OR a statue featuring all squad mates in Mass Effect 2 with Commander Shepard in the fron OR a model of Harbringer (easier than the Normandy to make so this or the statue is the most realistic).
All pre-order armor (I HOPE this is not done [pre-order armor]. I live in Ireland so I wouldn't have been able to get any of this if it wasn't for the mess up on the XBL Marketplace allowing me to get it all).
A 128 page hardback A4 Artbook containing almost all artist sketches of the environements, characters, ships and elements cut in the game along with an explanation/short paragraph for most drawings.
5 Limited lithographs.
The Soundtrack aswell as the soundtracks for Mass Effect 1 and Mass Effect 2.
The Mass Effect comics.
Alternative cover art. I would state what I would like that art to be, but first I would need to see the original cover.
A bonus disc featuring 8 hours of behind the scenes, 4 main missions with audio commentary and an hour long video stating how the story/mission structure was changed during development.
Now, the last feature depends on the first feature. A case, either shaped like the Normandy (so the case itself is the Normandy [note: this is only if the statue or Harbringer is included] and the top comes off which holds the rest of the content), a case shaped like the Omni Tool or a Harbringer case.

But now comes the clue:
When you unmask her, you activate an embedded digital Photodisplay, like you can buy in almost every store, that displays whatever photographies you have saved on a SD-Card or USB-Stick.
So instead of revealing her face, you can reveal whatever you hold dearest (or save various funny Tali's Face pictures found in here) to you.
That is awesome, emotionally binding in more ways that just to the game and extremely creative!

Hey chris, do you knwo what airsoft is? It's basically like paintball, but with real-life replicas of weapons, and you fire BB's in stead of paintball.
I suggest a airsoft assault rifle (Jessie?) as an uber item. It will be pricey, mind, but I'd get it. I think replica's of weaponry has already been done and is kinda cliché. But a working airsoft item? that's new, mate
