The fight is going fine, and then some of the wizards cast Etherealness (at least that's what I think it is), and suddenly a few of them are no longer able to be attacked. They just walk around ignoring me. The problem is I'm stuck in combat, and the door remains locked, presumably until they're all dead. I've tried dispelling it, waiting it out, and reloading. It happens each time. Am I missing something totally obvious?

I'm having trouble in the Headmistress' tower in the Academy. I place all the soul fragments in the door, and start the fight with the Red Wizards after the cutscene.

No, you're not missing anything. The DESIGNERS missed when they gave escape spells to creatures that have to be killed to trigger the script.
All you can do is wait them out. They will eventually attack or do something that removes the etherealism.
If you reload, be sure to have a bunch of Greater Dispel Magic and Mordenkainen's Disjunction spells handy.

I waited for close to ten minutes before reloading. I wasn't able to target them when I tried to dispell (with a scroll or Mordenkainen's Disjunction). Very frustrating! Time to start a new DA:O runthrough til I figure it out I suppose

I have noticed a bug that seems to have been introduced in a patch somewhere along the line where enemies will sometimes just not attack in MotB. This is rather frustrating when they are hidden like what you say here.
Keep in mind though that magics such as Dispel can be fired on the ground, you don't need to cast it directly on a target. You can still catch them in the area of effect. Same goes for other area of effect spells such as Fireball. Try tossing some of those area of effect spells around and see if that wakes the wizards up.
Hope you manage to get through because the best scene in the game (one of the best scenes ever in videogames in fact) is coming up right after.

I've tried the AoE dispell under them, with no luck 
Tomorrow I'll try again. Maybe see if I can catch who casts it, and just nuke them down as soon as I can.

Hidden creatures can still be hurt by aoe attacks, spells or whirlwind for example. Wail of the banshee would be a nice wake up call as well or greater magic missile storm
