In my opinion, the Reapers are living monuments. All civilizations rise, have a period of stablity and dominance and then, over the course of decades and centuries, fall. I think the Reapers were created to be sort of a stop gap. Think of emperors and kings in our own past. They created these eleaborate tombs that were enormous and full of riches and such. Why? Because they wanted history to remember them. It's a form of imortality. This, i believe, is the reason Harbinger refers to the harvesting as an "ascension". In their eyes, they're not destroying our race. They are assuring its existence for all eternity.

Yeah how. They only have one ship. There's no way they'd be able to tackle anything defended with that one ship. That reaper would have been left unfinished. And as far as I know, they aren't mentioned in Me1. They are mentioned in the books however.
Hence the plan to launch a virus on the non-heretic Geth, bringing the huge reinforcement needed.

Also, it's likely that the collectors have multiple vessels. Plus they could possibly hire anti-human mercs (batarians or even Turians) to assist them.

So, what exactly was the big gamble here for the Reapers? If it's inevitable anyway, then it simply becomes a "Well, why not? May as well see if we can at least get this partially out of the way before major reaping operations commence" thing. If things go well, good. If they don't go well, oh well. They can always make some new Collectors later, if worse comes to worst. They'd already done what they were mostly for anyway: keeping tabs on the organics and an eye out for good Reaper material.
I just can't see this loss as being that big a deal from the Reaper POV: "Well, darn. They broke that tool. Jerks. Hmmm, maybe we'll make the new one from the asari. Or the quarians. Sure, a few hundred thousand humans kinda got wasted there, but then we were constantly getting data and results back here in dark space, so it's not that bad. The glass is totally half-full people! We'll just do somethin' else. 'Find another way' if you will. Suppose we'll have to build a new base/recapture that base in the core too, and roll out some new firmware for the relays so that IFF trick can't be used again. *sigh* I tell ya': a Reaper's work is never done..."

Solid logic. It just seems a mite superfluous to me. Although, I guess you could say the same for a lot of the game.
