I guess we can expect some dialogues based on this, but I imagine it won't be anything big.
As far as people in Ferelden keep the dogs in high esteem I don't think all of them belive in that "they choose their worthy masters" thing, I picture it as a legend, just like that cats have nine lives (in our, real world
).
But that is just me guessing, anyone please feel free to state otherwise

It will be like (Excited) (happy) pretty much tell you the emotion the dog is feeling while it does its movements that would tell you the emotions. (begging) (sad eyes) something like that.

There is a real cute dialogue between Dog and Morrigana that sold me on dog totally. He can't talk of course but is very expressive and brings out dialogue with others. There is some nice lore on them in the Wiki.
Since I own two GS dogs I am, of course, bringing Dog along with me - so I have been reading all I can find on him. He sounds pretty good and I would assume he would add some respect to your party with certain people, certainly not all.
I also read he is a dog of action and if you stand around a lot or go on pointless side quests he will start to whine to let you know he wants to get moving.
