Greek and Roman sexual practices couldn't be less relevant.
Factors that matter:
1) The sexuality of the universe they're building. Because it is a creative work of fiction.
2) Contemporary popular opinion. Because no game exists in a vacuum and they have to cater to as broad an audience as possible.
3) Development resources. Because there are limitations to the medium, namely finances and time, that have to be managed towards priorities.
The balance of those factors determine how the love interests operate in any game.

I usually envision my male character being the shorter one ( should he be in a s/s romance). That's why I'm iffy about that relationship. If it was a Qunari female however.. Well, that's a different story. One with lots of chuckling involved.
Well, I am a girl, which skews my personal tastes. Honestly, I did the male-on-male romance once (I mean completed it), just to experience the whole game, and I was pleasantly surprised. I'm not a yaoi fan, and good god, I can't say I've met one who calls herself that that I like (someone, feel free to prove me wrong), but it doesn't stop me from enjoying a new roleplaying aspect. It's really not a feature I personally require, or really take all that much advantage of.

Anyways, I play whatever romance I find first, usually. If it's a same-sex romance, all right sure. If it's a heterosexual romance, why not. I'm a rather open minded guy (as to say that I don't really consider myself either gay, straight, or bi, really.) and I just roll with what I end up deciding to choose for that one character if I feel it fits how I began to shape him or her as. I think I played every single possible romance possibility from either genders in DA:O.. I'm more than willing to do so in DA2.

Yep, I agree. I myself remind people of that when they get a little too hysterical at the idea BioWare might not include the romances. There are valid reasons not to do so.
All the same, that doesn't change the fact some people would like more options, would like to see a romance option they personally feel more comfortable with and that includes them. In the mean time, it harms no one to ask, or speculate. You see?

So with that being said, I absolutely totally 100% support there being gay romance options available. Why?
That they can experience romance storylines that they can relate to and are comfortable with. I don't want them to have to have the same reaction to Zevran trying to get into my pants that I did. They shouldn't have to resort to mods to change how the game labels the sexual identity of their character to get Alistair to be interested in them, as I imagine that is on some level demeaning.

I've always wondered if it sometimes came down to the voice actors just not being able to get into the role properly or just being uncomfortable being gay for a certain role.

Voiceactors are pros and as long as they're paid, they'll do their job fine. It's players that will likely feel uncomfortable, personally I don't care much but tbh ~10 years ago I'd feel uncomfortable as well and wouldn't have gone through a game that made me uneasy.

Anyways, to be serious for a moment, can anyone imagine a male human getting it on with a male Quanari? It's considered dangerous for a woman(Sten suggested they needed a muzzle in addition to a fiery hot steel rod in order to get male to stop when it got "too painful") , but at least [some not-so-serious comments].
